Turkey Meatballs

turkey meatball cut intoI love meatballs almost as much as I love tacos… That’s a lie, but I do love them a lot. I am not Italian but married an Italian man whose mom makes the best meatballs I have ever had. I prefer them without sauce because they are THAT good.

I don’t try to compete so I make healthy-(ish) meatballs so that they cannot be compared.

2 zucchini

1lb of lean ground turkey

1 Mozzarella cheese stick

4 tbs of egg whites

1/2 C of breadcrumbs

1/2 Tsp of onion powder

2 Tsp of Garlic powder

1/2 Tsp of oregano

1 Tsp of Italian Seasoning

Iturkey meatballs in pannstructions: Preheat oven to 350 degrees. Grease large size pan that can be put in oven. Cut mozzarella stick in half the long way then horizontally 9 times. Combine ground turkey, egg whites, bread crumbs and seasoning in a medium size mixing bowl. I use my hands cause I am not proud. Once combined form meat mixture into balls. Put 1 piece of the mozzarella in each meatball and place in greased pan. On medium heat pan fry each side for 1-2 minutes. Then pour sauce over and bake for 30 minutes.

zoodles with onionWhen there is 15 minutes left on the meatballs prepare the zucchini. Using the zoodle maker “grate” 2 zucchinis. In a medium size pan stir fry zucchini on a medium heat till cooked through. I typically throw in some onion too.

Serve meatballs over zucchini.

5 meatballs and a cup of Zucchini is around 400 calories.
