Egg Muffins

I am not a huge fan of eggs. I only started eating them within the last 3 years. I much prefer egg whites to egg- eggs cause the texture is less runny IMHO. So when I make egg muffins, I use whites not actual eggs, but you can really use either o a combo of the two.

I make a dozen at a time to last me all week- 2 per serving. Each serving is roughly 150 calories.


1 carton of egg whites

Chopped peppers, onions

Canned of diced chilies

Jar of jalapeno (I only use a few)

Turkey Bacon (4 pieces)

Asst. spices (I use garlic powder parsley flakes, onion powder, ground pepper and sea salt)

Cheese (optional)

Directions: Preheat oven to 350 degrees. Spray a muffin tin with some sort of a cooking oil (I use coconut oil.) Mix 1 carton of egg whites with spices to taste, add in can of chopped IMG_0783chilies, peppers and onions. Mix well. Cook 4 pieces of turkey bacon in the microwave until crispy. Takes me about 4 minutes- 2 minutes 80%, flip 2 more minutes on 80%. While it’s cooking pour equal amounts of mixture into the muffin tin. Add in a couple pieces of jalapeno, and cheese to taste. When bacon is done crumble up and then sprinkle on each muffin. Cook on 350 for 25 minutes, then 5 minutes at 375.



Let sit till cool. Then wrap 2 per piece of foil and store in fridge. Reheat for 7-10 minutes at 350.


Can also use 1-2 muffin to make a breakfast sandwich or burrito with a wrap or English muffin!
